There is a little release button on the bottom of the DIN cable casing. If you squeeze hard with your fingers you should be able to pull it out. If you just want the speaker wires, just cut them before the plug, so you can splice them back again in the future.
Speaker wires should be red & blue for right side. Left side is green & brown, all these wires should have a white stripe
