I did the same thing: read bentley, drained transmission, added 3qt, found out I overfilled. I think the bentley figure is for the whole transmission including the final drive which is drained separately ( I think ).
I drained a bit out and the shifts are better. I understand you don't want to mess with your drain plug again, so maybe you could put a long skinny hose, like a 3.5mm vacuum hose, down the filler neck and suck out some excess. You could pump it out with a brake bleeder hand-pump, or siphon it out if you're careful. If it's too thick you could warm it up a bit by running the engine for a minute.
