The dashpot is the little flying-saucer shaped thing in front of the throttle bellcrank that is supposed to slow the throttle closing in the last couple of degrees. If it allows the throttle to slam shut, that can lead to stalling.
The turbo Bypass valve (AKA Hooter valve) is supposed to prevent stalls by letting some turbo flow recirculate from upstream of the throttle plate to the inlet side of the turbo when you close the throttle. You can check it by finding the vacuum hose that runs to it, popping it off the throttle body or intake manifold and sucking on it. If it doesn't hold a vacuum, you need to get a new one.
Since it happened all at once, I'd suspect that the diaphragm in the bypass valve developed a hole.
But don't discount the first ToddN's advice.
Check the cheap and easy stuff first. (The bypass valve isn't necessarily cheap, but it's easy to check.)
