Matt,
I would NOT disconnect the battery while the car is running because it is there for reasons other than just providing starter current: it also absorbs current spikes (somewhat) and all the current the alternator is putting out that your accessories aren't using.
Others can chime in and state the above more precisely or in more correct terminology, but DON'T undo the battery cables while the car is running! And don't try to jumpstart your car with the battery disconnected. Excess electrical current is a BAD thing if it runs rampant into your K-Jetronic computer, etc.
To your Q #1: See above. Also, engine should stall because battery is completing the path in the electrical circuit--correct me if I'm wrong, fellow SAAB folks!
To your Q #2: Bad alt. ground would PROBABLY cause the oddball signals and stalling.
I can't speak authoritatively on alt. ground quirks, because such a scenario hasn't occurred on my 900s. However, I do know what the alt. ground wire looks like and my guess is it's 16-guage wire.
Below, I've linked to Tom Townsend's webpage scan of the 1989-90 SAAB 900 electrical repair manual (battery charging troubleshooting pages). It has checks and a wiring diagram, too, and illustations should be same as '87.
