Matt,
If you had a catastrophic hose blowout, it may be possible the coolant you're seeing and smelling is actually from the outside of the engine. I'm sure the combination of cooling system pressure and underhood turbulence sent that coolant everywhere. Were the plugs already wet on the outside when you pulled them? If they were, there's no way the tips would still be dry once you threaded them out a certain distance. Water in the oil? That could be from water running down the spark plug holes, etc.
The engine stalled on restart because it was still too hot to run initially. If you had full power, the engine is probably OK.
First I would do a compression test to determine if all your cylinders are still tight. Try changing the oil to see if water appears in it again.
While things are apart, check the condition of all your hoses and do them all at once.
Good luck.
JD
