I've done the switch, and it was worth it. There is a site that describes it and everything is well written. If you have ABS brakes it is a little different, but not major. (you keep the Auto brake pedal and cut it down narrower so it is the same width as a manual brake pedal.)
A head gasket, however, does not require engine removal. I had a 89 turbo conv with a burned valve and replaced the head with a good one from a 900S. I would recommend that solution IMHO.
My advice is to fix the headgasket (perhaps swap the head with a lower mile head from a non-turbo) and take care of the auto until it dies. When that happens, switch over to a 5 speed if you love the car enough.
