Cooling woes (longish)

Hmm, my car isn't cooling properly (but that could be because of the 120 degree heat index today).

Ok, 85 SPG with too many miles for them to matter any more.

New or Recent
- Thermostat
- upper hoses
- system flush
- Water pump

Problem: The car cools well (with the AC on) at low speeds. When cruising on the interstate, the temp inches up to stay from 2/3 - 3/4 into the green. It gets hotter when I go past 70 mph.

Some candidates:
- Fan t-switch on radiator. The fans to cycle when idling, but they only come on when the temp reaches 3/4 into green.
- Temp sending unit

With these first two I've been lead to believe that they don't go bad slowly, but that they just go bad. That my fans cycle indicates that the switch is good, and that my sending unit sends somewhat valid information counts it out as well.

- Guage. My fuel and temp guages simlutaneously jump sometimes. My temp will read high and fuel is at 1/2 (jump) then my temp reads normal and I need to visit a gas station sooner than I had planed. My dash lights also went out around the same time my heating problems started. Since my lights went out, I haven't noticed any jumping guages.

- Insufficient coolant. I opened the bleeder valve on the t-stat housing and poured the coolant in slowly, yet it only took 7.9 liters of coolant (this is after I removed the radiator, most of the hoses, water pump, and engine block plug behind the exhaust manifold) and Bentley says capacity is somewhat over 10 liters.

Both fans work well, and the radiator is clear. My problems started when I blew a heater hose. The car did not overheat, but coolant leaked out. I fixed the hose, replaced the coolant and did not notice any problems with the fix, only sometime later when I took a long trip. My oil is clear and the cooling system seems to be operating under normal pressures.

So, any suggestions?
