At full boost, you're pretty much out of the range of the AMM - I can't be exactly sure of the ECU fuel-air schedules, but I'll bet the AMM plays little into that.
Yes, AMM's do go 'out of adjustment'. Actually, engines go out of adjustment. The AMM is adjustable,but that's to cover not only aging in the AMM, but to deal with engine variations - FPR differences, minor vacuum leaks, all of that. Check the posts - there are ways to adjust the AMM. It is much more than just setting the AMM to a set resistance - you need to check the O2 sensor output - you could probably use your A/F meter if the response time is fast enough.
The ECU has fuel schedules - multiple ways to decide how much fuel to stuff in. There is logic in the ECU to decide if it's taking the minimum or maximum of the various schedules. As an example, there's probably a schedule that determines amount of fuel with engine speed, another with fuel vs. AMM, modified by engine temperature, another modified by O2 sensor setting, and the ECU switches between them depending on a bunch of things (temperature range, engine speed, etc). So it's quite possible to see small fuel flow variations due to differences you haven't noticed - like what RPM that full boost was at, how long at boost, air temp, possibility of knock, etc.
