Usually the time charged to replace from cat back at a Saab shop is 0.5 hours.
Doing it yourself could easily run several hours laying on your back getting dirt in the face, trying to get the three bolts apart at cat and swinging the exhaust system/tail pipe from over the rear axle.
Also, the system sold online doesn't come with center pipe.
The cost at my shop would be $290.00 parts and labor + tax for cat back, so $330.00 doesn't sound too bad since they might have a higher shop labor?
Keep in mind that online supplies sell parts for a fraction more than their cost. And they are usually located in the suburbs where shop rent is cheap using low paid parts handlers.
Repair shops needs to be where the customer are and profit from parts together with labor charge is what pays for the shop rent, parts stock and income for the people involved.
