Jeremy,
First, don't ever accept the insurance company's initial offer. They are trying to lowball you. Second, tell your insurance company instead of a cash settlement, you'd rather they replace your car with one of "like kind and quality." That means you'll take an '89 900S Airflow in the same condition yours was in before it got bent.
Insurance companies rather settle with cash because it's a lot less hassle. If you can't get more, make them find you a new car. Be insistant. Of course they would rather give you more money than try to find another car so they will make you another offer.
This is an endurance contest. They are hoping you need another car right away so you'll settle. Try to last them out. Call your state insurance commissioner if necessary and complain if they drag their feet.
You are insured so you can make up a loss. 110K is low miles for any '89 car and baby miles on your SAAB. Anything less than equal value is still a loss.
