Start with 0.24 to compensate for wear. I don't think that there's a sweet spot as such, other than performance deteriorating once the gap wears beyond 0.28.
The ES plugs have a softwer wider center electrode and will wear faster than the EV. To my mind, the thin hard electrode on the EVs gives the spark a better, high charge density spot for the spark to jump to. But it's 4 times more expensive than the ES.
Half of one, 6 dozen of the other :-)
