There is the possibility that you need to properly bleed the coolant system. Or, with a working thermostat and fan switch, you are now noticing a properly working coolant system. Warming up to operating temps as soon as possible is good.
Dash control rod appears to have come loose.
The AC system problem. If I'm not mistaken - there has to be a specific amount of pressure within the system in order for the compressor to kick on. The wires controlling that circuit are connected to the receiver/dryer. If those wires are disconnected, then perhaps the compressor circuit is interrupted.*
Then there's the high temp cut-off switch which is located on the upper radiator hose. If those wires are disconnected, the compressor definitely won't kick on. You can bypass that switch by bridging the wire connectors to check if the curcuit is operating. Beyond that there's the AC system relay, which may be shot.
*I don't know if the receiver/dryer circuit operates in the same manner as the high temp switch - where bridging the wire connectors completes the circuit. Perhaps disconnecting them completes the circuit.
And then there's the general wiring of your car. An 82, because of it's age, may have wiring problems. Things like corroded lead connections, ruptured wiring, connections beneath the relay and fuse panels loosening.
