Joe,
If your hissing sound comes when you have the cruise control on, then you might have a vacuum leak in one of the pedal switches. (There is a switch, as you may know, on both the clutch AND brake pedals to kill the cruise control when pedal is depressed.)
When you take your foot off the gas pedal, the vacuum increases (well, boost pressure decreases first then goes to zero since yours is a Turbo, THEN you get vacuum). This could cause a hiss due to air being sucked in if there is a leak in the vacuum lines to your cruise stuff. When you press the clutch, the "dump" valve on the c.c. switch for that pedal opens, creating a HUGE vacuum leak, as designed. It is such a large hole that it wouldn't hiss, so hissing stops.
This is all purely supposition, though.
This may be the culprit EVEN IF your cruise is turned off, but I'm not sure about that.
Maybe someone else can think of a scenario besides this one.
