George,
Pulling all the valves is a lot of work on a 16V, especially with less than optimal tools. Maybe I missed the post on why you want to do this. I have never done this just to have the head resurfaced, only to replace the stem seals and rarely so at that (once). As long as the shop is careful to minimize flying metal, compressed air and water are adequate to clean it up after. If you need a valve job, let the shop do the whole job.
