No matter how many times you add coolant to the tank it will boil or expell it until it maintains a set level. For my car, this is around half an inch above the "MIN" mark on the reservoir. As long as the concentration is okay, let it stay there. Just check it often.
If you find you have a rapid coolant loss, or if coolant is being forced through the reservoir cap even when you did not overfill it, the signs begin pointing toward head gasketry. What happens is when the car is turned off and the head is warm, and only if the leaky cylinder is under compression, that compression is allowed to bleed off by overpressurizing the cooling system. This forces hot coolant out the cap if the cap is functioning properly.
By the way, that little plastic cap is important- I replace mine every 5-10 years. The original black cap (75 77 323 I think) has been replaced with a better, yellow model. It actually regulates pressure in the cooling system.
