If you're going to convert harnesses from model years, I'd get the newest one I could get my hands on - '93 comes to mind. Over the years they got more, not less wiring, and most components are still in the same places. The main thing (I'd think) is having wires that go from the right place to the right place, not to mention fitting up to the bulkhead connectors.
The biggest part of the adventure will be fitting up the various sensors and control modules to the new wiring harness. You'd have to balance the cutting and splicing and redefining wiring codes against buying the control modudules and sensors that match the wiring harness you find.
The upcoming issue of NINES has a story by Larry West describing his upgrade of a 1986 CV to LH 2.4 APC/DI. There's no limit to what an enterprising and dedicated Saabist can do!
