Andy,
I use a variety of methods to clean the block deck. First I start with a plastic scraper, then move to artist razor blades to peel bits of gasket untouchable with the scraper. The final bits can be cleaned with a little emery cloth. I wipe down the block decK afterwards with brake cleaner. Use bits of rag to keep junk out of the water passages and ball up some rags for the cylinders where the pistons are at BDC. A little time consuming but it works.
For the pistons, I spray the tops with a little WD40 or brake cleaner and leave overnight. By morning, the carbon has loosened into a fluffy matter easily wiped off with a cloth. After cleaning the piston tops, get out the vacuum cleaner and suck up any carbon bits that fell into the ring land area.
If the head won't come free, rap it a couple of times with a rubber mallet. Avoid hitting the rails around the cam cover interface. They may give way if you hit them hard enough. I don't think you'll have much trouble with the head sticking.
