My oil becomes hot enough to open the cooler thermostat on a regular basis, even in very cool weather. Cold weather I don't know from since I live in southern CA. I wouldn't recommend removing the cooler business altogether. Fitting a new thermostat housing, a gasket, or the hose fittings is what you need to deal with. I had a friend with a similar attitude about "gimmicky" car maintenance. For instance, with his used early 80's Ford V6 pickup truck, he never changed the motor oil or the filter. He'd just add oil when needed. His thinking was he'd just get a new motor if it died, or a new truck if the body wore out before the engine. He ended up beating it up severly with rough use (all purpose farm, work, hauling), torched it for fun, used it for target practice for a time, then hauled the carcass away.
