I also had that problem and found that the temp sensor was functioning properly but the connector was corroded giving false readings.

Make sure the connector is getting a good solid conncection. When I discovered this I cleaned all the connections on the engine, fuel injection and any other connector I could find.

I used a fiberglass pen - basically a pen with a twist out section thats made up of very fine strands of fiberglass, it can get into the connectors without prying them open and when you brush the pen across the connector they go shiney again. After that I sprayed the connectors with electrical sealent. The car has been running perfect ever sinceand I no longer get the engine light coming on.
