Squealing comes from the brake pad itself vibrating. The 'blue goop' remains tacky, even at high brake pad temperatures, and this damps out the vibration. There are a lot of anti-squeal approaches, from goop to springs to shims. Sounds like the ones you got have shims.
This is a tough one, because not all pads will squeal - it depends on the individual pad, and the state of your calipers and rotors. Each car will be different. Use goop, and the pad probably won't squeal. Don't use the goop, and the pad probably won't squeal.
If changing the brake pads isn't a big deal for you, I'd go with the metal plates supplied. The absolute worst case is that the pads squeal. If that happens, go to the autoparts store and buy some anti-squeal compound. Basically, the blue goop. You can buy it as a goop or a spray. Pull the pads out, goop them, and stick them back in. A brake job is only about an hour. There is no law that says you must leave brake pads in until they are worn out.
I usually don't use goop, because it doesn't come with the pads I buy. Every once in a while I'll get squealing, and when that happens, I find an hour on a Saturday afternoon, pull the pads, and goop them.
