For the front mount, the test is to open the hood, step on the brakes and gently slip the clutch with the transmission in 1st. If the front of the engine rises more than 1/4 inch or so, the front mount is toast.
If you have a Turbo, one sure sign of a bad right-side mount is that one of the turbo elbow nuts has worn a spot in the battery heat shield.
If you can't put your little finger between the top of the mount and the engine bracket on the right-side mount, then it's collapsed.
Failure of the non-hydraulic mounts is more obvious, because you can see the cracks and distortions in the rubber.
FWIW, I haven't found an old SAAB that had good hydraulic mounts - the front and right mounts on my late '88 SPG (86k miles) were both bad, as were the ones on my '89 SPG (when it had 99k miles.)
