I purchased an aftermarket wood-trim kit that is applied using adhesive (tape or glue, I forget). I will be installing it later this Spring. I had done this using an oem Saab accessory for my now-gone '96 900S, and it looked really nice.
The kit I have comes with the dash, glovebox, and window-switch pack. But what I see here in your pic is sweet--the glovebox has the original split in it with the "900" emblem, and the door panels and arm cushions have wood trim also. This looks to be an oem Saab option.
There was a recent posting inquiring where one would be able to purchase what you have pictured, not aftermarket. Hopefully that post-er will see this picture.
In the meantime, if you want an aftermarket kit (which is just as nice), check out eBay. I have seen them there for $49 (USD). Definitely shop around since they differ tremendously in price (I've seen them for $169 USD!). Unfortunately, I did not heed my own advice and had paid $100 for mine.
I think the original black plastic applique that is on the stock dash has to be removed before applying the wood trim.
I also purchased a (used) wood stick shifter to match the trim kit off of eBay. You will see them there once in awhile.
