Any of your methods would be OK. On mine, the low-pressure switch was easiest to unplug the 2 wires & touch them together. I bet the high-temp switch (upper radiator hose) would be easy to simply peel back the rubber boots & bridge them with a screwdriver. From an electrical viewpoint, it's all the same.
BTW, when you short the low-pressure switch, only do this for a moment. If it's truly low on refrigerant, you don't want to keep it running long enough to destroy your compressor.
