Other than the AIC valve, other easy checks are:
if you are driving a turbo car, check for vacuum on the bypass valve (do a search on this board), altho i dont think that is your problem.
Other thing to do is check resistance on the NTC sensor at different temperatures. its a coolant temp sensor that feeds info to the ECU. they are cheap and easy to replace ($21 from eEuroparts).
if you need more specifics email back here and i'll dig them up (ie resistance values on the NTC sensor).
