when you installed the vacuum pot? Do a timing check, because red-hot turbo and exhaust manifold (under non-racing conditions) are an indication of retarded timing or bad cam timing - gas that's not burned in the cylinders burns in the exhaust manifold and turbo and heats them instead of pushing the pistons. Since you didn't do anything to the cams, it's got to be the distributor timing.
As far as the wild boost goes, like John says, check to see whether you pulled off or otherwise damaged the hose from the APC solenoid to the wastegate actuator.
Don't worry about putting the injector plugs on in the wrong order - the harness configuration won't let you install them wrong and the LH injection system fires all of them at the same time, anyway.
