The gauge wires are probably for the gauge lights and perhaps a voltage source for a voltage gauge.
The wires to your Crutchfield conversion will include 8 speaker wires in one plug and another plug for power sources and grounds. This second plug currently has 3 black ground wires, a brown and white wire from the light ing rheostat, a grey wire for constant antenna power, a green wire to the antenna, and a thicker red wire that supplies switched power to the radio. Your new plug may only have one ground wire out to the new head unit and leave the other two ground wires "blank."
