I watched a pro indy shop do several head gasket replacement jobs while I was renting a space in that shop not long ago. I don't know what they charged, but the job included an extensive cleanup of the entire head once removed, including carbon removal of the cyl head surface, the valve faces, plus the tops of the pistons. It was a one day job from start to finish. A two to three day job if resurfacing of the head plus valve replacement or topside work was done. Head resurfacing was fairly quick - they would take it to a local machine shop early in the morning and the head would be back around noon. I also watched them re-build and install a complete 2.3L head, then watched as they fired it up and let it idle for 20 minutes until the (new) lifter noises went away. The hard part with any head job is all the intake and exhaust component removal, plus the draining and replenishing of fluids, then the re-tuning once started. Depending on what is done besides a simple gasket replacement, I don't see how any skilled mechanic could do the job for less than $300 in labour alone.
