If the crazyness of the gauge means it changes instantly, suddenly, that doesn't sound like the true temperature is messed up. So changing t-stat & coolant probably won't help. (But, y'know, fresh coolant isn't really a BAD thing...)
I'd check wiring connections for the gauge. The sender for the gauge is the small sensor on the front end of the head, near the thermostat, with only one wire. Loose wire? Check that it's tight where it clips to the sender, also check the wire itself is solid in the crimped terminal.
Then take off the speaker grille. On the back side of the gauges there's a couple small nuts that make electrical connections to the gauge. Make sure they're not loose.
If that doesn't work, then you're gonna have fun with a circuit drawing & a DMM...
