I'll go in for a knob, certainly. It's no problem to drill out the appropriate sized hole for the bottom insert and that depression for the top gearing emblem, right? If it's an issue, I'll just take the core knob and drill it myself. Don't even need to sand it or apply a finish.
As far as the door panels - I'm curious why you think it would be easier to do the door paneling over the glove box. Actually, I don't see how you would be able to make door panels, given it's form fitted curves along various places. Glove box and dash panels I can see being done without much difficulty. A wood veneer cut to size from a paper template couldn't be easier.
