I have answered this a couple of times before.
The gasket is used to keep the coolant flowing in a certain direction (not the easiest path).
That's why some of the canals in head or block is covered.
Each car manufacturer have their own design.
One time in Sweden I did a head gasket on a Fiat van. That gasket you could actually turn backwards since all the ports lined up perfectly (not like the Saab gasket that fits one way only). Well, I did.
Anyway, the ONLY DIFFERENCE on that gasket was the size of the holes covering the coolant channels, but by flipping it backwards I created an over heating problem that only occured after about 30 min of hard driving.
The temp needle kept creeping higher and higher and higher until the car boiled over.
Installing a new gasket the right way fixed the problem.
So don't go and drill up those covered holes. It will only lower the efficiancy of the coolant system.
