More likely the µoron didn't know how to back off the piston...and it shouldn't take 2.5 hours to install rotors and pads unless you have a sticking yoke.
The brake handle shouldn't come all the way up if the pistons were adjusted properly, i.e., after the pads are installed, you pull up the handle 4Ð5Êclicks and work the service brake until a hard pedal is ¿btained. The ebrake should hold at 7-8 clicks after that.
That being said, the pads need to be bedded in...30 stops from 30mph (easy-moderate) with 30 seconds or so in between, essentially what it takes to get back up to 30mph. No one does it...maybe 10 brakes from 50-30 mph with a minute or so in between. With metalmaster pads I just drive the car normally to work hoping I don't have to make an emergency stop which really heats them up more than I want before they're bedded in...they'd do it, but I might have problems.
In your case I'd just keep driving unless the driver's side caliper is continuing to run hot...if so, you'll have t¿ remove it and either rebuild it or just get a new rebuilt caliper.
