Every car is different. You want to run the highest grade (octane) of gasoline that gives you full performance. Any higher octane rating is not only a waste of money, you will actually get lower gas mileage. That's because higher octane fuel actually has less energy content.
Yes, the turbo engine does adapt to lower octane fuel. It does this by reducing performance. If that is acceptable to you, then fine, you're saving money.
The only way to tell is to increase the octane rating of the fuel you use until you don't see a performance increase. That's the highest you should need. And it varies from car to car, so there is no hard and fast rule. I had a '86 900T that required 93 octane to get full performance. I had two '99 9000Ts, which have basically the identical engine, and I could get full boost with 87 octane. So I ran 87 in the cars that would take it. 93 would be a waste of money.
Try and stick with the same brand or two brands of gas, preferably something national. There are also gasoline variations from region to region, and over time of year. If you're on the hairy edge of an octane rating, you might see a performance fall-off when the gasoline company reblends for winter/summer.
