Single clunk each time = pretty darn normal, can be fixed by bending the u-shaped mounts inward a bit and/or using some disk break quiet compound on the backs of the pads. I used some break quiet compound on my '87 to fix this.
Reapeated clunking (clunkety clunk clunk clunk) as you brake might be something loose and could very well be dangerous. I consider myself a seasoned veteran of brake jobs, but even I have left a caliper bolt loose and had this happen. Its the nature of how you do the job: you put one bolt in loose, manuveur the caliper around to find the second hole, fit and tighten the second bolt, and sometimes just forget to go back and tighten the first one. Anyone could do it (although with brakes you'd expect them to recheck everything), doesn't mean your mechanic is "bad." The bad mechanic doesn't recognize the error, apoligize, and correct it.
