Sounds like the tech that worked on your car was not a Saab guy, or at least forced the car in/out of reverse without pulling the collar. Normally you can fix the problem by removing the shift lever assembly and readjusting/bending the pin on the bottom.
It's hard to break the plastic ball, but anything is possible. Not a big deal to replace.
Back to the thermostat. I personally have never heard of an 80 degree thermostat. It sounds like they are bsing you or maybe put in a non-OEM thermostat. I'd get a new OEM 82 degree thermostat and put it in yourself. The OEM stats have a small hole in the base with a little brass dongle in it that allows air to bleed. This hole must be towrds the top to properly bleed the system.
I would do all of these yourself in the future. If the shop won't fix the shift for free, do it yourself now.
