I believe cat converters need between 600 to 1000 degrees to work. Catylithic converters sort of produce their own heat, since it's sort of a "re-burning" of the mixture that occurs. Oxygen sensors need about 600 degrees too, and typically manufacturers locate them very close to the engine because of this. On the SAAB's, they are on the inlet to the turbo. The turbo operates within heat ranges that will cook it's motor oil lubricant.
Likewise, it's easy to say that the exhaust systems get quite hot! The burning odor you are experiencing is probably a layer of oil, like WD-40 that was sprayed on the exaust parts while they were in storage. This it to keep the parts from rusting before they are installed on the car.
