Rotors are just big hunks of cast and machined iron. Provided they are within spec, junkyard rotors are just fine and, from a u-pull-it, about a quarter of the cost of new. They are no more likely to fail than the ones already on your car.
As for calipers, well, folks are probably installing used calipers on cars all over the world right now. Bottom line: Used brakes are fine.
Nate--Bring a good penetrant to the junkyard for the mounting bolts; they strip easily. Consider getting an inexpensive impact hammer with a 1/2" drive, then get a 3/8" converter and use a 3/8" drive torx and 3/8" inch *deep, 6-sided* 10mm socket to remove them. I'm not talking about an air tool, but the 5-6" device that, when you bang on it hard with a hammer, exerts a simultaneous impact and twisting force. Costs about $15-20 and makes short work of stubborn rotor removal chores.
