It's several things to take into account on how low to let your brake pads go before changing.
Caliper pistons popping out of its socket is not to be afraid of IF! the proper minimum rotor thickness is observed and if you don't grind down the metal of the pad after the lining is gone.
Customers that I know comes back on a regular oil change interval (5K miles 6 month) I allow to drive longer before I replace the pads, changing them at about 5-10% left of material (roughly 1-2mm).
If I know that they will not be back in a long time, I recommend them to replace the pads when it is about 20% left of the material (roughly 3-4mm).
Some pads and calipers perform differently and the rear pads on an 88 and up have a tendency to "tilt", wearing the pads uneven.
Some brands of pads have a tendency to growl when they get thinner and maybe need to be replaced at shorter intervals.
As more you want to get out of your pads as more often you need to check them to see how your car wear them down.
I did notice that older Saab books say 1mm for both the 900 and 9000 and the newer books says 4mm and the NG900 says 5mm as minimum pad thickness.
