If you've already removed the knee bolster, you should be able to get the dash off without much more trouble than you've already encountered. The biggest concern is to make sure that all electrical connections are accounted for when re-assembling.
I'll give you a rough overview, since I haven't replaced a dash in a few years.
Stereo: Remove the stereo from its DIN slot, and then remove the mounting cage, which is usually held in place by a bunch of bent metal tabs. Use care when removing the cage, because it is easy to unplug some vent controls which are located immediately beneath it. Also, remove both dash speakers along with the ribbed vent hoses (two screws each- either phillips or t-15 torx. There isn't much clearance between the screws and the windshield, so I usually use a magnetic bit holder with appropriate bit, and turn it with a pair of pliers while magnetic piece with my other hand. Otherwise, a very short driver will work.)
Control panel: This is the part surrounding your instrument gauge cluster. It is held in place by four long bolts (early ones are phillips-head, newer ones are torx) which feed vertically from the bottom of the dash (near the knee bolster) and are guided through soft plastic "straws" held in place by fragile plastic guides. The long bolts have rings engraved near the threaded ends (#1=single ring, #4=four rings), which is important because they are all different lengths. I would recommend labeling each connector as it is disconnected- particularly at the ventilation switch (which also has a vacuum harness that can be disconnected in its entirety- don't start unplugging individual vacuum hoses.) Try to work the panel out without using much force. The top edge will need to come out a few inches towards the front seats before you can lift it up and out.
When this stuff is out of the way, you've got the dash ready to go. There are two mounting bolts in the cavities where the speakers were, and I think another below the glovebox and one near the steering column. Removing the steering wheel can be helpful, but is optional. The piece of dashboard which is in the way of the steering wheel can be safely bent up and over the wheel.
Oh, yeah- the side window defroster vents might be stapled into place. I pull the staples out and use duct tape when re-installing the dash.
If your car is a turbo model, I would suggest replacing every rubber vacuum hose you can get your hands on while the dash is out. I'm not sure if n/a cars have any rubber vacuum hoses in there, and the clear plastic vacuum tubes seem to last forever.
