I just did this on my '85 900T a couple of months ago. I didn't do that much, of course I was pretty strapped for cash at the time. All I ended up replacing was the power steering rack and the clutch and brake masters. The Master cyinders just needed to be replaced, those are not that bad to swap out at any time. The PS rack was MUCH easier to do when the engine is not in the car. I followed the Bentley manual's instructions for R&R-ing the engine, if you don't have one then I would suggest getting one. Well worth the money.
Be careful not to break the exhaust flange bolts off when you remove the pipe from the turbo. All three of mine twisted off and it was a b ... er ... it was difficult to remedy the situation.
What you really need to check are all the really tough things to get at when the engine is in the car; oil pump, water pump, PS pump, crank pulley and the alternator mounting bushings (the long lower bolt won't come out when the engine is in the car, it hits the firewall).
Finally, unless you have replaced the belts recently, I would replace all the belts while you have the engine out. Especially the alternator belts, if one of those breaks, you have to remove all of the other belts to replace them. And trust me, that is no fun at all.
