If you plan on two days- tripple it!
You really need a plan and some $$ for parts and they should be ready-available. Change what you can't get to if the motor is in- which is a lot, but min. is MMs, bushings, main bearing, GP seals, might as well do the water pump or fight with the fire barrier later. Hell- if the clutch is old, that's easy and cheap while it's hanging. Exhaust seal is a must- easy to extract the bolt you will probably break. Alternator bushings!!
And of course the suspension is wide open- if your rack is leaking- might as well do it too- and of course bushings on the sway.
A GP cleaning is always candy, but be ready for rust and that treatment - fix.
If you plan on going into the engine- wait. You can do nearly everything from engine bay.
The ultimate is the tran. Now you have this solid motor pouring into your tired old tran. that could barley keep up with it new. The best time for overhaul is in conjunction with tran. Then $1K sounds like such a small amount.
Then again I did it. I learned plenty, cost me time and hair, not to mention what I had not budgeted for.

My .02, we cost me significantly more than that :)
