Tough question. The reason "torque to yield" bolts are used is to provide as uniform as possible compression on the head gasket, so the gasket seals properly. When you torque to yield, there is no more compression achieved by further torquing, there is just assurance that you have reached the yield point (and corresponding torque). There is no other reason to stretch the bolts. If you don't torque to yield, there is an increased chance that some bolts provide more compression than others.
So the decision is yours. Do you want to make the attempt to make more uniform compression at the risk of possibly breaking one of the bolts? Every time the bolts are retorqued to yield they are more likely to fail. I would not retorque if I were you.
I can't figure out why there is debate about reusing head bolts. They are so cheap compared to the labor that goes into head gasket replacement that new bolts are a no-brainer.
