Consider that there will be a temperature difference between the inner driver/tripod unit and the outer CV joint - the inner driver will become much more hot due to it's direct contact with the engine, plus the exhaust manifold just above it. For that reason a grease that can withstand a higher temp is used. A lower temp grease used there means that it can (and usually does) soften at the higher temps. Afterwards it cools down. Then softens back up while driving. Basically you're distilling it over and over. Eventually it won't gel up like grease is designed, just wears down and dries up, leaving the bearing surfaces unprotected from vibration, heat and friction.
