work brakes until you get a firm pedal.
You've already done this.
Pull up the ebrake handle 5 notches and pump the brake about twenty times, let the pedal relax between pushes. Engine running helps.
Let the brake handle down, pull it up, it should engage at around 7 clicks.
It's possible the replaced caliper moves the pads a little bit one way or the other and the old pads now have to be reseated on the rotor (there's lips on the outside and a ridge on the inside edges of the rotor where the pad had worn the rotor down). Once the pads are reseated and the caliper adjusts itself the ebrake should be fine.
On the other hand, the new caliper may just be bad. Yes you can adjust the piston out a turn and try it (IF you can get the old pad back in...)but I would just drive it a couple hundred miles and see if it straightens out itself.
Watch the brakes for high temps on one side or the other when you park it. If you feel a lot or much more heat/temp on one side (use your open palm about an inch from the wheel over an opening) you've got a sticking caliper.
