You may find that the nuts are really, really hard to get off of there...
the two things you can do to get them off without damage (buy new ones for reinstall anyhow)
1) soak every few hours w/ PB Blaster (or your fave magic potion, i like the PB), allowing at least overnight soak. Squirting the nuts when warm (engine running not long ago) will help to draw the oil deep into the threads.
2) Rather than round off the nuts, give it a rest and fire the car up... get the manifold nice and HOT... very hot. Remove the nuts while the manifold is still really hot. Obviously, you'll have to be careful not to burn yourself. If you don't have a pair of Mechanix gloves, this would be a good time to get them.

ps: the other advice given is good.. gaskets go on dry, and locktight can save you tightening, and will likely be long gone (burnt) before the next time you need to remove the nuts..
