Fuses go for good and bad reasons. The hood takes a fair amount of current and things like cold weather may have an effect and fuses can get a little 'old' after being heated a few times. At this stage I would replace the fuse and wait and see if it happens again.
I have no idea if the jack fluid is suitable - although it is obviously a hydraulic oil and you might be alright/lucky. Since the components on the convertible top hydraulic system are costly I personally, for my peace of mind, would like to know the fluid I was using was suitable (the fluid is about the cheapest item!). I suggest you:
a. Check the spec of the jack oil you used with the manufacturers - perhaps phone their help desk - basically you're looking for a mineral, non detergent, 10W oil for use in hydraulic applications.
b. If that doesn't help, don't panic (because the system is working) I would (1) try and buy a suitable oil; (2) syphon/suck the old stuff out of the reservoir; (3) refill with corrrect oil and run the system up and down a few times to extract the old oil from the pistons; repeat (1) to (3) again at least once more; (4) go and have a beer.
