I've got a '92 and I would rather get it on the road; that being said I do want to work on the interior.
Look at junkyards and dismantlers and folks on the classifieds with parts cars. My only real complaint with my convertible is the glovebox door is all askew from being whacked with the passenger seat headrest, the fabric around the right rear speaker is loose, and she's missing some bolts along the top of the rear seat. You'd be surprised what a little leather conditioner can do too. The leather on my driver's seatback is cracked, but whose isn't? They should still sell those bits but they're going to be expen$ive from a dealer. They should also still sell the side panels in the back and front door trim because they break or are damaged in collisions and such.
It sounds to me like you need a second opinion, maybe a different dealer that wants your business. I'd ask about individual panels first instead of telling them or implying you want to change the entire inside of the car.
