The sensor has a small fan that sucks air in over a temperature sensor. It also sucks in dust, dirt, cat hair, and anything else that wanders by. Eventually the gunk builds up on the sensor and sticks into the fan, making noise. It also keeps the sensor from working right.
The reason it makes noise after you shut down is because the fan keeps running for about 10 minutes after you shut the car down. The idea is that if you just hopped out to grab a Slurpee at the 7-11, the climate control will know what the cabin temp is when you hop back in. Otherwise, the residual heat of the dash would make the sensor think the car was hot, and you'd get a blast of cold air.
The first thing to try is to blow some compressed air into the sensor to see if that will clean it. I don't recommend an air hose - TOO much pressure. Try a can of compressed air, like used to clean camera lenses.
If that doesn't do it, pull the sensor out - it's very long, but it's just a press fit in. Do this after it has shut off. I don't know the NG900 dash, so you might need to pull something else around it out to get in behind it. Once it's out (doesn't have to be completely out, just a few inches), pop off the front cover, and you'll see the sensor (the thing covered in hair and dust) and the fan. Clean them off. I recommend lubricating the fan with some silicon or teflon lube spray. I DON'T recommend either WD-40 or graphite. WD-40 is an oil base, and will attract and trap dust. Graphite is a conductor and doesn't belong in electrical devices. Silicone or teflon sprays have carriers that evaporate.
That should fix the problem.
