You probably have a few different ills that are contributing to the situation, which is not a good one at all.
Where is the coolant running out?
It's likely that the coolant temperature switch on the upper drivers side of the radiator is bad. An easy way to check it is to pull the connectors off the switch and, with the key in the RUN position, jumper the two connectors. If the fan comes on, then the switch needs to be replaced.
There is probably also an air bubble in the head which needs to be bled out using the procedure in Bentley once you have refilled it.
It's also possible that there might be a few other leaks in the system, maybe a worn water pump seal, but the first thing to look at is the temperature switch on the radiator.
You really don't want to drive it until you have figured this out because you stand a good chance of blowing the head gasket and warping the head when it overheats like this.
