The switch works by opening when it reaches the high temp setpoint. It is possible for it to start to open at lower temperatures and cause the symptoms you describe.
An easy check is to jumper the two connectors that clip to the top of the switch.
It is also possible that the switch is operating correctly and that you are actually getting into the danger zone. You shouldn't be overheating unless the radiator is partially blocked internally and/or the thermostat is going bad.
When was the last time you had the thermostat replaced? It should be yearly or, at the most, every other year.
