The oxygen sensor is only there to make the catalytic converter perform as good as possible.
It is quite possible to run the car without it but it will most likely not pass smog when that day comes. The fuel computer operates with a 0.5 Volt default value when the O2 sensor is disconnected.
The catalytic converter gets saturated with one or the other gas and the way to get rid of those gasses accumulated in the cat is to run the fuel mixture lean and rich, back and forth.
That's what the oxygen sensor does when switching back and forth in voltage. It's telling the fuel computer to run lean to run rich to run lean again and that makes the cat work properly.
That's also the reason why a lazy oxygen sensor can make the car not pass smog because the cat doesn't get rid of the saturated gas quick enough.
Many have replaced the cat when the car only needed a new oxygen sensor.
